Moroccan Tajin: an extraordinary ambassador

Moroccan Tajin is not just a daily meal, but rather it’s an art of Moroccan cooking.
Moroccan Tajin is an amazigh dish that we still find in many parts of North Africa. Successors have inherited it from ancestry. Moroccan Tajin is a symbol of generosity and hospitality. Tajin also is at the same time the name of a clay container and the name of a meal. Tajin is totally made from heavy clay. It’s consists of two parts:
The base part is a concaved flat made to be used as a presentation dish.
The above part or the cover is a frustum cupola; the cover is formed like this to push down the vaporized both in order to spread the both over vegetables.
This picture shows a Moroccan traditional Tajin which is much known in Moroccan villages. Villagers don’t use gas bottles to cook Tajin, but rather they use dry wood and almond‘s skins. This slow tactic increases the deliciousness of Tajin.

Moroccan Tajin is usually prepared with some of these contents:

Vegetables: potato, carrot, onion, tomato, colza, cauliflower, pumpkin, quince, olive, pea…

Spices: salt, saffron, cumin, canella, ginger, garlic, pepper, black pepper…

Dry fruits: prune, raisin…

Meats: beef, chicken, goat meat, sheep meat, pigeon meat…

Tajin on mars:

In 2013, in Moroccan Tajin is used by NASA -beside two other meals-in an imitation of life on mars in Hawaii island to feed astronauts, because they believe Tajin is between meals that endure mars hard environment.

Diplomatic fight on Tajin:


Tajin has also entered the diplomatic fight between Algeria and Morocco. Algeria believes that Tajin is an Algerian dish, and that Tajin should be called Algerian beside other meals, like couscous which is also known in the world as Moroccan couscous. Morocco has succeed to spread its culture through the world and Tajin now is a global meal not only Moroccan.
